Ingredients
5 eggs
2/3 cup sugar
5 tbsp cherry juice (can be replaced with water)
5 tbsp sunflower oil
1 cup flour
10 g baking powder
2 tbsp cocoa
2-3 drops of rum (optional)
25-30 cherries
100 g of dark chocolate

Method
First remove cherry pits, then sprinkle them with 1 tbsp flour mixed with 1 tbsp icing sugar. Mix them and leave them aside. Beat the eggs with the sugar until blanching, add the juice, the oil and essence. Sift flour and baking powder, add to it and cocoa. Add the dry ingredients to the mixture, stirring with a wooden spoon. The resulting mixture pour in greased and covered with baking paper tray. Initiate cherries on top and slightly squeezing them into the mixture. Bake in a preheated oven 170C degrees. Once the cake is ready and cooled bending in tray. melted chocolate in a water bath and pour it cake. Garnish optional.
