Ingredients
550 g sugar
300 g mashed potatoes cookies
50 g wheat flour
225 g cornmeal
50 ml honey
75 g ground almonds
2 eggs + 1 egg yolk for coating the cookies
grated peel of half a lemon and half orange

Method
Mix the puree and sugar and cook for 1 minute. Once cool add the remaining ingredients and cook over low heat until boiling. Get out of the fire and then cool the mixture to form the cookies. Smeared with egg yolk and bake in a hot oven for 10-15 minutes.
