Ingredients
4 eggs
500 g tomatoes
2 tbsp (20 ml) olive oil
1 onion
1 sprig parsley

Method
Tomatoes are dipped briefly in boiling water, peel and cut into small pieces. Fry to yellowing in olive oil sliced onion, add tomatoes, salt, pepper and stew until a thick porridge. Add chopped parsley, to make 4 holes in them eggs, add salt to their egg whites, Cover with a lid and leave to harden. Serve immediately.
