Fried kidneys with small onions

Ingredients
4 pork or veal kidneys 2
100 g salted salo
200 g small onions (shallots)
1/4 cup red wine
milk
salt
pepper
1 tsp flour
lemon juice
frying fat
2-3 tbsp strong broth
Method
Kidneys are cleaned, cut into pieces and soaked for several hours in cold water, which changing over 1 hour and then placed in fresh milk for 2-3 hours. Remove, dry with a towel and fry in preheated oil until light brown. Remove to a warm platter, which is Sipan broth. In the fat from frying put salo, cut into small pieces and objectives onions, add salt and scatter red pepper. Fry for 5-6 minutes, sprinkle with flour, make wine and boil. Cook for a few minutes (until softened onions) Season to taste with lemon juice and place in the kidneys.
