Gratinated turbot

Ingredients
1 clean turbot
200 g mushrooms
3 tbsp butter
1 tbsp flour
100 ml white wine
100 ml fish, clam or vegetable broth
2 tbsp chopped fresh lovage
2 tbsp of white bread crumbs
2 tbsp chopped almonds
salt
pepper
Method
The butter melts and it put the mushrooms, cut into thin slices. Stir until the water evaporates. Add flour, stir briefly and add the wine and broth. Once the sauce thickens, season with salt, pepper and lovage. Turbot is cut into pieces, add salt, sprinkle with pepper and each piece pour sauce. Sprinkle with crumbs and almonds and put to constipation 190 C for 10-15 minutes. The dish is in the region of Balchik.
