Lamb stew with Guinness beer

Ingredients
1 kg lamb, cut into pieces
1 large onion
1 carrot
3-4 large potatoes
400 ml beer Guinness
600 ml lamb or vegetable broth
2-3 sprigs thyme or 1/2 tsp dried thyme
2 cloves garlic
2 tbsp flour
3 tbsp sunflower oil
1 tsp sugar - optional
salt, pepper

Method
Chop in large pieces carrot slices. Fry the meat in the oil, until golden. Remove the meat and at the same sunflower oil sauté onions, carrots and garlic for 4-5 minutes. Add flour, meat, beer, broth and spices. After the boil, reduce the degree of heat and simmer, stirring occasionally. After about 1 hour and 15-20 minutes, add sugar and coarsely chopped potatoes. Allow to simmer for 20-30 minutes. Serve sprinkled with chopped parsley. * stew definitely bitterness of beer, but it's very tasty.
