Why bites rinse?

Rinse them because the meat stands, especially when it is cold you bleed and marinade is not suitable to cook with it.

meat has okrehkotilo of milk and took the scent of spices, which is enough, then beef bouillon and other spices complement the flavor of the finished dish and is sufficient as a liquid to bake meat, so as to remain bites without water. The goal is not to have sauce, but to get juicy, firm and fragrant. If you izpechesh with marinade will have to win (a slow fire) preblizitelno two hours and a half.

Thanks for the clarification :)
