Submitted by enr on 15 Dec 2008
Ingredients
4 eggs
175 g sugar
80 g wheat starch
80 g flour
1 tsp baking powder
3 tbsp water or juice compote, mixing egg white
Method
Egg whites pour in porcelain or plastic container, pour water and stir to a thick snow, so if the mixture is cut with a knife to show trail. The egg white snow is wet enough to melt the sugar is poured in a thin stream. Stirring continued until she ceases to creak at the bottom of the container. Add the egg yolks - previously broken with a portion of the egg white mixture. Flour, starch and baking powder to pour egg mixture, stirring with a spoon, but not broken. Baking powder should be well blended into the flour before adding. Pour the mixture into a greased form. Bake in a moderate oven. I do two the base (roast them separately), but may at once and then be cut. I put and cocoa - for dark bases, walnuts - for walnut, also raisins.
