Stuffed peppers with eggplant

Ingredients
500 g peppers (green and red)
500 g eggplant
salt
garlic
sunflower oil
parsley
Method
Peppers and eggplant are baked and peel. Peppers, cleaned of seeds, open and filled with minced meat eggplant, seasoned with vinegar, salt, garlic and sunflower oil. Arrange on a plate and pour a little sunflower oil and chopped parsley.
