Tripe Breaded cheese

Ingredients
1 kg tripe
4-5 eggs
2-3 tbsp milk
flour
salt
pepper
200-300 g cheese
sunflower oil for frying

Method
Cleaned and washed tripe cooked to full tender in salted water (for faster can be used a pressure cooker). After cooled down, cut into pieces. Yolks are broken down with the milk and add a little flour (for slurry). With gentle stirring add the beaten egg whites. This mixture is rolled tripe pieces and fry in heated sunflower oil. Finished fried pieces are lining up in a buttered baking dish, grate cheese on top and bake in the oven (top only) until the cheese acquires a light golden color.
