Potato crown with leeks and bacon

Submitted by enr on 24 Sep 2010
Ingredients
1 kg potatoes
500 ml milk
40 g butter
2 eggs
50 g grated feta cheese Parmesan
4 leeks onion
150 g smoked bacon
50 ml white wine
salt, black pepper
Method
Boil the potatoes in salted water, peel them still warm and blend them together with 20 g butter. Put the milk to warm without boil, add the potatoes and cook the mixture for 10 minutes. Remove from heat and add the eggs, Parmesan, salt and pepper. Cover the bottom of the pan, greased with olive oil, with a portion of mashed potatoes, and the rest put in injection molding and ends so as to form a crown (the center remains empty). Bake at 200 C for about 15 minutes. Meanwhile clean and wash the leek, cut it in rings. Fry it on low heat about 5 minutes, stirring often. Add chopped bacon bits, stir and add the wine. Allow to evaporate and stew for about 10 minutes. Remove the potato crown, pour in the middle of the meat mixture, return to oven for another 5 minutes.
