Yeast (leaven) of chickpeas

Ingredients
2 handfuls of chickpeas, dry
3-4 tbsp flour
water and / or whey
Method
Chickpeas are hammered into small pieces and pour the hot water just to cover. Allow warm. After about 24 hours, when it starts to lift flakes, add flour, kneaded a ball medium soft dough. Allow to double in volume. The ball is broken into pieces and suspended in 400 ml warm water or whey. This water (leaven) knead dough according to the recipe, not put yeast. Chickpeas pieces remain inside, ie not strain. For bun (sample recipe): 1 kg of flour is mixed with about 1 tbsp salt, screened and gram yeast knead dough. Formed into bagels, allowed to rise to double and bake.
