Pickled sore bonito

Ingredients
1 large bonito
1 kg sea salt
3 tbsp sugar
500 ml sunflower oil
1 lemon sliced ​​
1 tsp cayenne pepper
1 tsp black peppercorns
1 bay leaf
1 sprig rosemary optional
Method
Fish is cleaned and cut into slices with a thickness of 1.5 cm. The salt was stirred with sugar. The pieces are placed on it and covered well everywhere. Leave to stand for 10-12 hours. Salted fish are washed well, dried and ranks in jars, as between layers put lemon slices. The oil is heated until a piece of bread, put it, flushed quickly. In the hot sunflower oil put pepper, bay leaf and rosemary. Remove from heat and cooled down after one minute, put cayenne pepper (optional may not put). Cool. With tepid sunflower oil is poured over the fish and leave to rest in the refrigerator for at least 7 days.
