Method
Selects ripe and healthy tomatoes. Cut lengthwise into quarters. Discard the seeds of tomatoes and arrange in pan. Put them in the sun to dry. When dry filled into jars, among others, put garlic and fresh basil leaves and a part of the jars are put bay leaf, allspice and grains of pepper. Pour olive oil, closed with caps and sterilize for 10-15 minutes. * They become incredibly aromatic and delicious. Used for salads, garnishes and even on a slice of bread. * In general, drying type used canning tomatoes - must be thick because drying otherwise would remain only the husk tomato. There are different varieties such tomatoes, I used the Roma. They are very fruitful and like them. As for the drying if kept without putting in olive oil should be dried in about 2 weeks to the sun - the water content should be minimum, otherwise you will go moldy. And when you put them in olive oil, dry them only 2-3 days - they remain juicy and when borne by the oil are very pleasant for consumption.

korneliq, thanks for the recipe. Long sought tested recipe, and from comments you understand that it is such. I was very happy - will necessarily make my dried tomatoes (hopefully the weather permits, I hope at least some more sunny days).

Just got such tomatoes and wonder what to do now. Will definitely try!

when you close them already in jars salt puts you. My now more dried

I do not put salt. The ones I bought, also without salt.

Very nice recipe! Here in the Czech Republic, bought dried tomatoes are expensive! I have a recipe from here, but I bought the very oil noticed obviously put a little raw sunflower seeds.

Last year I could not take the recipe, but this is not missed. There are tried and I can not comment on the taste, but that time will come. I poured them with sunflower oil (I'm sure with olive oil will be more beautiful, but unfortunately, my dear).

Almost ate tomatoes, and dont forget to comment. When you put them to the dish are very nice and I enrich the overall taste. I tried them and natural, in the company of cheese, but the flavor, which are made of bay leaves him feel stronger. As he kills the real tomato flavor. The recipe will use it in two versions - with spices (for meals) and natural sun-dried tomatoes (salad).

During drying, how protect them from insects?

to protect them from insects, cover them with gauze. Two years ago I bought dehidratator / drier / and am very pleased. My model is 5 baking pans and collect pretty material. Land them on average for 12 hours at 40 degrees. Thus drought and fruits and spices and herbs.
