Pudding with cottage cheese (Aliventsi)

Ingredients
250 g cottage cheese
3 tbsp thick cream
30 g butter
3 eggs
salt
1 tbsp (10 g) cornstarch
1 tbsp (10 g) wheat flour
1 tsp (5 ml) vegetable oil
Method
Two to three hours before the preparation of aliventsi the cottage cheese is wrapped in cloth and pressed between two boards as the top put some weight to expire remaining whey. Drained cottage cheese was ground through a strainer with 20 g butter, salt and cream and mix well with 3 egg yolks. Half an hour before serving mix in the sifted flour and beaten egg whites to stiff. With the remaining butter smeared suitable form. The bottom and her cheeks are sprinkled with bread crumbs. The vessel was sprinkled with vegetable oil, to allow the finished aliventsi be removed more easily. Bake at moderate oven for 20-30 minutes. Serve with a bowl of cream.
