Ingredients
2 roasted eggplant
6 peppers
1 clove garlic
salt
2 tbsp vinegar
2 tbsp sunflower oil
olives 6
1/2 boiled egg
parsley

Method
Eggplants and peppers are peeled and mashed mashed (perhaps a blender). Add salt to taste and seasoned with the oil, vinegar, crushed garlic and chopped parsley. Mix and pour into a bowl. Decorate with slices of boiled egg and olives.

I might do the same, it is a great salad. Sometimes add a little mayonnaise is tasty too. Well done.

I have to share that for about a year and a half since this salad is made at us constantly. Bake 10-15 pc. aubergines and put only about 10 pc. roasted peppers, which here are sold peeled and marinated. A lot of garlic and parsley. Without olives and egg. In the refrigerator lasts at least two weeks must be well sealed box. In practice we have not remained without this salad. A woman of my brother in the spring weakened nearly 3 kg in a week - this salad, cooked without oil. Ate belly :) The recipe is super simple and very tasty!
