Flour mixed with baking powder and sugar in a large bowl. In a separate smaller bowl, whisk the eggs, add the milk, the oil, the essence and pour into flour mixture, stirring gently with a spoon. Pour the mixture into a buttered and floured pan. Top to scatter dried fruits, pre-soaked in water for about an hour, and pressed a finger to sink gently into dough. Bake in a preheated oven at 180 C for about 30 minutes. Once cool, cut and sprinkle with powdered sugar.
