Frit with mushrooms, spinach and cheese

Ingredients
100 g spinach
200 g mushrooms
1 tbsp sunflower oil
10 g butter
1 small onion
1 clove garlic
2 sprigs thyme
4 eggs
4-5 tbsp cream
1/4 cup grated feta cheese Parmesan
salt, white pepper

Method
Spinach wash, drain and cut into small, mushroom slices, onions cut into crescents. In a pan heat the butter and the oil and fry the onion. Add garlic, mushrooms, thyme seedlings, spinach and stew until the water evaporates. Season with salt and pepper. Eggs are broken down with the cream, add Parmesan and stir. Mix eggs with spinach-mushroom mixture. Refractory or form pan is greased with sunflower oil pour the mixture and bake in a preheated oven at 180C for about 25 minutes. Frit can be made in smaller forms (such as portions), as before withdrawing is dusted with grated cheese on top and left in the oven only to melt the cheese.
