Ingredients
1 lobster (500 g) or a can of crab
100 g butter
1 tsp mustard
1 1/2 lemons
2 yolks
Egg 1
1 sprig parsley
pepper
salt
vinegar
piece of onion
Method
Living lobster cleaned with a brush in cold water, place in boiling water to which are added salt, vinegar, onion and pepper. Omara stick under water with a spoon and boil for half an hour. Cooked lobster is cut lengthwise, remove the internal parts and carefully remove the meat. Yank is tongs, remove their upper shell and remove the meat. Then crushed cartilage connecting the tongs with the shell body, and the meat is removed. All meat is cut into pieces (canned crab meat is heated and cut into pieces). The butter was melted on a water bath, add chopped parsley juice of a half lemon, black pepper, salt and evaporated in the yolks. In small bowl put the mustard, add parts of the oil mixture and stir until a thick cream that leave in a warm place. Warm lobster meat is placed on a plate, pour the sauce and garnish with pieces of boiled egg and lemon.
