Pickled Pumpkin

Ingredients
1 pumpkin, Hokkaido, about 1.5 kg
rind of 1 orange
6 star anise
​​ 400 g sugar
4 tbsp lemon juice or lemon concentrate taste
optional: cloves, cinnamon, vanilla, lemon grass or thyme

Method
Pumpkin Peel and cut into cubes, about 2x2 cm. Boil 1.5 liters of water, sugar, anise, orange peel and lemon juice. Insert the pumpkin mixture into the boiling and boil for 10 minutes, should not be pulps and remain tight. Pumpkin drain and distributed in jars with screw. Marinade boil again, seasoned with a little lemon and still boiling pour over pumpkin. The jars are closed immediately and turn the cap down until cool. * so prepared pumpkin is ideal for further processing in cakes, fillings for pies, for fruit salads, creams or just to eat. * If you use regular (large) pumpkin, boil a little more, about 15 minutes, because its phasers are tough.
