Roast beef

Ingredients
1.3 kg beef fillet
1/3 cup (70 ml) sunflower oil
sauce "Uorchastar"
pepper
salt
1 tbsp (10 g) flour
broth
Method
The meat is left to rest in the refrigerator for 4 days. Before preparing to cut fat and tendons. If possible leave thick skin with a thin layer of fat must be cut into squares to not distort the meat as it cooks. Meat add salt, sprinkle pepper and leave it to sit for two hours. Put it in a pan with heated sunflower oil and bake in a very strong oven for 15-20 minutes. The oven is reduced and the meat is doizpicha. Bake for about 45 minutes depending on the quantity and quality of the meat. Inside should be pink but not bloody. If well-done, with a large needle pricking it expires pink juice (not bloody). The meat is removed, add flour to fat fry is, pour broth, stir, add the sauce "Uorchastar" boil a little.
