Pleven kyopolou

Ingredients
3 eggplants
8 peppers
8 tomatoes 1 jar or tin
1 onion
4 tbsp sunflower oil
3-4 sprigs of parsley
1 tsp salt

Method
Eggplants and peppers are baked and peeled . Chop finely. Crush all mentioned products (and can be milled with machine for grinding meat). Tomatoes grated and cooked with the oil. Once cool everything is mixed and stirred together with the chopped parsley.

Only that we weed and not put garlic onion! And binding the eggplants after bake was immersed in cold water for at least one hour in order to remove its bitterness and once peeled off is left to drain! I know that from my grandmother, who was a great cook and was also weed!
