Mini PANETONE

Ingredients
450 g flour
25 g fresh yeast
250 ml warm milk
80 g brown sugar
50 g raisins
550 g candied orange peels
2 tbsp orange juice
60 g butter
50 ml olive oil
3 yolks
pinch of salt
zest of one orange

Method
Sift the flour and form a well in the center. The yeast was dissolved in 100 ml fresh milk with 1 tbsp sugar and poured into the well. Top lightly dusted with flour. Cover and leave for 20 minutes. Meanwhile finely candied orange peel and raisins and soaked in orange juice. The butter was melted and mixed with other products and macerated fruit. Add the remaining milk. All pour in the flour and kneaded soft dough using a mixer at maximum speed about 6-7 minutes. Cover and leave for 20-30 minutes to rise. The dough was divided into 16 balls. Place in greased muffin form (timbalcheta). Place in cold oven to average BBQ. The oven is placed at 180 C and bake for 30 minutes.

kneaded dough in the bread machine and then added the scabs and fruits. I made one big and several small PANETONE gift for Christmas.
