Shakshuka cheese

Ingredients
3 tbsp olive oil
1 large onion
1 large red bell pepper
3 cloves garlic
1 tsp cumin and paprika
chilli, salt and pepper
800 g of peeled tomatoes ( fresh or canned)
150 g feta cheese (feta)
6 eggs
fresh cilantro (or parsley)
chilli sauce for serving (optional)

Method
Olive oil is heated in a large skillet over medium-low heat. Add chopped onion and bell pepper and cook until tender (about 20 minutes). added very thinly chopped garlic and allow to soften (1 to 2 minutes). Add and cumin and paprika (and sweet and hot), stir and cook 1 minute. Chopped tomatoes are added and the sauce is seasoned with salt and pepper. Allow to simmer until the tomato sauce thickens (about 10 minutes). added and the crumbled feta cheese and stir. Pour the sauce in the pan and to him carefully add the eggs and sprinkle with a little salt and pepper. * Dish is baked in a preheated 190 degrees oven for 7-10 minutes or until cooked egg white (eggs must remain soft-boiled). Serve with chopped cilantro (or parsley) and served with hot sauce (optional). * For ease, the dish can be left in the pan and cover with a lid until the eggs are cooked (2-3 minutes).
