1 chicken
1 large carrot
1 slice celery
1 onion
1/2 cup sunflower oil
1 cup flour
30 g butter
2 yolks
1/2 lemon
2/3 cup milk
2 tbsp cream
salt

Method
Washed and sliced ​​chicken pour cold water and put to boil, remove his foam and salt it. Add pieces, carrot, celery and onion and continue cooking until fully cooked meat. Then removed, and the broth is strained. The flour was placed in sunflower oil heated and stirred to give a light cream color. Diluted first with cold and then with hot broth, stirring continuously, to avoid the formation of lumps. Broth was added until a thick sauce which was heated a few minutes and was removed from heat. Yolks are broken down with milk and lemon juice, add and cream. The finished sauce thicken with egg-milk mixture and leave to boil again, then remove from heat and taste with the butter. When serving dishes are placed in the meat portion and pour the sauce.
