Fat base for layered cake

Ingredients
8 large eggs
3 large egg yolks
1 cup sugar crystals
2 and 1/2 tbsp honey
2 cup sifted flour

Method
You need to prepare the dough in a water bath. For this purpose, fill a 1-liter pot half with water. Put it on the stove on high heat. Place bowl over boiling water. Pour the eggs, egg yolks, sugar and honey and break them until they become foam. Will take about 7-10 minutes. Maintain a temperature of 45 C cup - use pastry thermometer. The mixture will go through several phases. First will be like foam, then will become smooth and eventually thickens. When this happens, it will be hot, with triple volume and light color, and sugar is completely dissolved. Remove the bowl from the heat and start beating the mixture with a mixer at medium speed until cool slightly increased its volume becomes a little more dense and light, about 7-10 minutes. Add the flour and mix carefully with a spatula until the mixture it over completely. Do not over-mix. Brush with butter and cover with parchment paper round tray 20 cm. Fill 3/4 of it with the dough. Bake it in a preheated 180 C oven until golden brown get base. It will take about 30 minutes. Leave the base to cool slightly. Remove it from the pan and put it to cool completely on wire BBQ. You can store the base 2-3 weeks in the freezer, wrapped well in plastic foil. Before you use it let it come to room temperature. * You can prepare chocolate base by replacing 1/4 cup of flour with unsweetened cocoa. Pre sift it. * Optional, you can replace the three egg yolks with 5 and 1/2 tbsp butter. Melt it, cool it and then add the flour. * The base is small and very thick.
