Fragrant pork

1 pork knuckle (a piece of meat about 1 kg)
3 tbsp mayonnaise
100 ml red wine
1/2 tbsp curry
# For shpikovane:
50 g butter
1 tsp paprika
1 tsp pepper
1/2 onion
3 cloves garlic (minced meat or pressed)
2-3 sprigs of parsley
salt, vegetable fat
The meat is washed and dried. To make deep cuts with a sharp knife in the shank. In a bowl mix all the spices, chopped very small onions, soft butter and mix. In each section with a small spoon or fingers put a bit of aromatic butter. Whole knuckle add salt, sprinkle with curry and smeared with plenty of mayonnaise. Put it in an envelope for baking, pour 100 ml red wine and 100 ml water, 2-3 tbsp vegetable oil and the bag is tied. The meat is placed in a tray and bake in a preheated 230 C oven until browned. When the liquid boils, is reduced to 160 C and baked for 2-2 hours and a half, depending on the size of the shank (meat). Serve with baked potatoes.
