Method
Of flour, a little fuzzy in lukewarm water and yeast 500 ml water in which the dissolved salt is kneaded smooth dough that leaves 15-20 minute warm. After the rise, the dough is divided into pieces of about 100 g, and they are made wicks length to 40 cm, which are formed bagels. Arrange in a baking dish, sprinkle with flour and leave for 10-15 minutes in a warm place, and then placed in 1 liter of boiling water and cook for 3-4 minutes until the float to the surface. Mim, bagels are cooked, they are always tough, but I guess you know it. If you get even tougher than normal, you can boil them longer. This is just a guess, I'm not sure this is the reason. In general, in order to emerge more quickly and to avoid caking of cooking, should have more yeast, which make them swell rapidly. I think '20 fresh yeast 1 kg flour leads to slow rising and therefore stay in the water longer.

The strange thing is that, put them in water they sink. I wondered why it says that should emerge ?!

Yes, really weird. Do not you were willing souring? The risen dough is lighter and therefore can not sink. Generally placed poluvtasali and heat water yeast trigger over faster, and for 1-2 minutes swells them enough to emerge as a lifeline, which is pumped into the water and swam above (greater than I gave leleeee. ..;)), I hope you understand me :)

Great bagels! But I put them in boiling water for 30 seconds, as I put in the water and baking soda.
