Ingredients
          3-4 eggs
          1-2 peppers (of your choice)
          1-2 courgettes
          green onions
          a few basil, mint and parsley
          2-3 pinches of salt
              Method
              Washed vegetables cut (diced courgettes and peppers into strips). Depending on your taste can pre-bake the peppers. Few feathers green onions chopped not too finely. In a hot pan put olive oil (for healthier cooking) and placed vegetables. Add 1/2 cup water Cover with the lid with a lid and leave to cook for a few minutes. Sprinkle with herbs and pour the beaten eggs. Add salt and leave to cook for a few minutes. Serve warm.
