Omelet vegetables

Ingredients
500 g boiled potatoes
2 onions
2 red peppers
20 olives
3 tbsp sunflower oil
8 eggs
salt, pepper

Method
Fry the potatoes and onions, season with salt and black pepper and stew about 10 minutes. Add the peppers and olives and stew for 5 minutes. Beat the eggs and pour it over vegetables. Fry until it forms a thick omelet. Using a small bowl or baking dish and turn and fry the other side.

Once you pour the eggs, leave only slightly harden omelet from the bottom and dopicham for a few minutes in the oven.
