5 kg lean pork
5 kg of solid fat marbled pork
250 g salt
40 g pepper
30 g sugar
30 g cumin
10 g saltpeter
The meat is cut pieces at 100-150 g, which is salting, and leave in a cool room for 24 hours to be salted and then placed on an inclined surface to drain off their water.
