Raspberry Parfait - Sophia Loren

Ingredients
400 g of raspberries
4 eggs
8 tbsp sugar
200 ml milk
200 ml cream
juice of 1/2 lemon
# To decorate:
raspberries
mint leaves
Method
Yolks are broken with 4 tbsp sugar, add milk and put in a water bath to thicken. Remove from heat to cool and add the beaten egg whites snow 4 with 4 tbsp sugar, lemon juice and cream. Pour into awash with water form and cooled for 1 day in a refrigerator. The next day the form is immersed in seconds in hot water and turns into a tray. Decorate with raspberries and a sprig of mint.
