Cut the quinces 4 of 6 pieces and clean the seed part. Immediately roll each piece into sugar and arrange in a baking dish. Sprinkle with cinnamon. Seeds, 1 sliced quince, remaining sugar and 1 cup water, boil for 5-6 minutes. Strain the liquid and pour into pan quince. Bake them until tender. If you have more seeds or sheet of quince, the liquid may be more - it gelled and is particularly delicious.
