Spicy fried meatballs

Ingredients
400 g veal
150 g poultry
1 carrot
1 sheet of chervil
1 onion
1 thick slice dry white bread without crust
2 tbsp milk
8 anchovy fillets
30 g butter
salt
pepper
2 eggs
parsley
flour
breadcrumbs
frying fat
1 tbsp vegetable oil
1 tbsp vinegar
1 tbsp wine
Method
Onions, Celery and carrot, chopped, mixed with vegetable oil, vinegar, wine, salt and pepper. In the resulting marinade to add some meat, cleaned from the skins and tendons and cut into large pieces and place in refrigerator for 1-2 hours. Then everything is ground with the bread. Add one egg, the mixture is kneaded well, and it is formed meatballs 8-12, which rolled in flour and allowed to soften. During this time, from the other egg, milk, flour and a pinch of salt is cooked thick pancake dough rather than the butter, chopped anchovy fillets and parsley prepare a paste, which is placed equally inside of each meatball. Then meatballs are immersed first in the dough, and then in bread crumbs and fry in very hot oil.
