Stuffed leg of lamb with beer

1 leg of lamb
200 g onion
200 g tomatoes
500 ml beer
150 g kidneys
150 g rice
40 g walnuts
4 tbsp vegetable oil

In drumstick incision is made along the length of the bone, removing a portion of meat, in order to form a pocket in which to place the filling. Leg is placed in a suitable container and soak with beer for an hour. Chop in small pieces and stew in the vegetable oil. Add cooked and chopped kidney, meat cut from the leg, and cleaned and washed rice. By pozadushat add chopped tomato. Sprinkle with pepper and salt it. Filling pour some of the water in which they spin yarn kidneys, and less than beer, which is soaked leg (the ratio of rice to liquid should be 1: 2.5). The walnuts cleaned and chopped in large pieces. Parsley cut into small pieces. Add to stuffing the walnuts and parsley. Leg is filled with boiled stuffing and stitched. Bake in a moderate oven. After pozapeche, make slits in the meat, add salt and smeared with butter. Bake until complete softening of meat, from time to time to pour the remaining beer. Serve warm, garnished with fresh vegetables of your choice.
