Ingredients
3 sweet potatoes, unpeeled
1/4 cup sunflower oil
pepper, salt
2 tsp finely grated lime zest
pinch of cayenne (cayenne pepper)
1/4 cup finely chopped fresh coriander

Method
The sweet potatoes thoroughly wash and cook until soften (can be pierced easily with a fork). Once cool cut lengthwise into eighths. Potatoes are coated with the oil and seasoned with salt and pepper. Bake on medium-hot grill (BBQ) or grill pan over medium heat until golden brown on all sides, including the skin (about 1.5 minutes on each side). Transfer to a plate and immediately forged a premix of a little salt, lime sheet and cayenne pepper. Sprinkle with coriander. * The recipe is Beansby Flay
