Appetizer with zucchini

Ingredients
5 zucchini
5 roasted red peppers
1/3 cup sunflower oil
2-3 tbsp vinegar
1 tsp salt
5-6 sprigs of parsley
2-3 cloves garlic
Method
Courgettes are cleaned and boiled in salted water. Once cooked leave to drain very well and squashed with a press. The peppers are finely minced meat or ground into a meat grinder and mix with the zucchini. The mixture is seasoned with spices. Consumed chilled.
