Florentine spinach soup

Ingredients
500 g spinach
1 onion
1 l meat broth
1/2 cup (100 ml) milk
1 tbsp (10 g) starch
30-40 g butter
1 yolk
salt
pepper
nutmeg
Method
Sliced ​​onion lightly fry, make up the meat broth and after starch dissolved in milk. Add chopped spinach and boil 5 minutes. Pass a soup, add butter and thicken with one egg yolk. Finally savor.
