Fragrant fructose sponge cake

4 eggs
1 cup sugar
300 g yogurt
1 tsp bicarbonate of soda
125 g butter or margarine (1/2 cup sunflower oil)
2 1/2 - 3 cups flour
1/2 cup walnuts
1 tsp rum
2 vanilla
1 heaped tbsp jam, orange peel, raisins, dried apricots, figs and dates
rind and juice of 1/2 lemon
powdered sugar for sprinkling or glaze of your choice

All Products must be at room temperature. In large pieces chopped walnuts and chopped dried fruit Oval in 1-2 tbsp flour. Separate the egg yolks from the whites. Softened butter with the sugar mix of fluffy cream. Add egg yolks, one by one. After absorbed completely from the mixture, gradually add yogurt with dissolved therein soda, rum, vanilla, peel and lemon juice and sifted flour. Finally add the walnuts, dried fruit and jam with gentle stirring, beaten hard whites. Pour the mixture into a buttered and floured cake form. Bake in a moderate oven. Cool cake is removed from the mold and sprinkle with powdered sugar or pour glaze. If using sunflower oil, then first beat egg yolks with sugar and gradually add the oil.

It is really delicious and is simple to prepare. I did it with the type of flour, so the photos a little dark. If made with white flour bits of dried fruit and nuts stand out even more. But the taste and aroma are the same.
