Fried chicken with cashew

50 ml olive oil
500 g of chicken breast fillets without skin
50 g cashew
1 yellow pepper
100 g celery
1 bunch green onions
2 zucchini
50 g dried apricots
4 tbsp dry sherry
1 lime (only sheet, shredded)
1 tsp sesame butter
250 g Chinese cabbage
25 g basil (fresh leaves)
Heat the olive oil in a large skillet (maybe in a wok). Add the chicken (cut into strips) and cashews and fry, stirring, for 2-3 minutes or until the chicken strips are fried and cashew nuts browned. Add the pepper, celery and green onions and fry for 1-2 minutes, stirring gently to soften vegetables. Add chopped zucchini and apricots and fry for 1-2 minutes, stirring. Vegetables should remain crunchy. Add sherry, lemon zest, lemon juice and sesame butter. Add salt and cook, stirring for about 1 minute. Finally, add the Chinese cabbage (finely chopped) and basil and stir quickly. Remove from heat and serve while hot.
