Guacamole - II type

Ingredients
2 avocados
1 lemon
1 sprig fresh garlic or 2 cloves old
1 small red onion
1 large tomato - flesh
1/2 green pepper
1 or 2 chillies peppers
1 bunch parsley
oil
salt

Method
Remove stones, peel and dice the avocado. Mash it with a plug paste, together with lemon juice (to not darken). Cut all the other products of finely, add olive oil and salt and mix guacamole. Cool, put in salad of avocado pits. They also protect it from tarnishing. Serve with corn chips, rolls, biscuits or thin slices of baked bread.

interesting recipe. But the placement of stones in guacamole is just a myth. When the peel / Cut avocados, it activates an enzyme into contact with the air - oxygen reacts and starts a process of oxidation / monophenol into contact with O2 hydroxylated - to oxidize polyphenols, causing darkening - the process is called polyphenol oxidase * * / :). One way is to add the acid - citric, ascorbic i. E vitamin C, which hinder the oxidation reaction. Another way is to simply turn guacamole tightly with plastic wrap to no contact with air or put in a box with a snug lid.

It is the same with apples, bananas, potatoes, pear, peach-containing enzyme with iron-containing phenols which react with oxygen to yield oxidation.The reaction can be delayed or prevented by inactivation of the enzyme with a fat (oil), reducing the pH of the surface of the finger (by the addition of lemon juice or other acid), by placing the chopped fruit into water or packaging venting, or by adding certain chemicals, preservatives.
