Heat 2 tbsp olive oil (sunflower oil) in a skillet and add the onion cut in crescents, sprinkle it with a little salt and 1 tsp sugar. Cook, stirring until the onion begins to caramelized. Add 1 tbsp brandy and wait until the liquid evaporates. Remove the onions from the pan and mix with 1 tbsp finely chopped parsley, 1 full tbsp breadcrumbs and 2 tbsp Parmesan and a little pepper. Sprinkle the chops on both sides with salt and pepper and brush with a little olive oil (sunflower oil). Fry in a nonstick pan for about 4 minutes on each side. Distribute the mixture of onion and spices on the two boilers. Sprinkle top with grated Parmesan cheese (cheese). Place in a baking dish covered with baking paper (or greased with sunflower oil) and bake in the oven (200 C) for about 10 minutes until melted and browned cheese.
