Ingredients
4 tomatoes
125 g thinly sliced Italian sausage (salami)
1/4 cup olive oil
1 tbsp lemon juice
1/2 tsp lemon zest
1 clove garlic
1 tsp chopped parsley
1 tbsp chopped basil (may dry)
salt
pepper

Method
Sausage pieces are placed in shallow baking dish. Mix olive oil, lemon juice, lemon peel, mash garlic, salt, pepper, parsley and basil. Pour over sausage and leave for 1 hour in the refrigerator by turning the pieces once. Cut the tomatoes into rings. In dish arrange tomatoes and salami alternately watered with the rest in the pan dressing and serve.
