Stuffed eggplant with beef

Ingredients
5 (500 g) eggplants
1/4 cup (50 ml) vegetable oil
500 g minced meat veal
6 (300 g) tomatoes
Chapter 1 (50 g) onion
10 cloves garlic
1 tsp (5 g) red pepper
pepper
parsley
salt
Method
Eggplant cut into halves, carve a spoon, add salt and leave to drain, then slightly zapazhvat part of the fat. In the remaining oil stew chopped onion, then add the red pepper, 1 grated tomato, meat, pepper, chopped cloves of garlic, parsley and salt to taste. The mixture after mixed well, filled eggplants. Arrange in a greased baking dish with butter, cover with slices of other red tomatoes and bake in a moderately heated oven.
