Tripe in Romanian

Ingredients
800 g tripe
1 veal shank
1 yolk
1 carrot
1 onion
1 zucchini
piece of celery
1 tbsp (10 ml) lemon juice
1 tsp (5 g) flour
20 g butter
6 peppercorns
1 bay leaf
salt
Method
Cleaned tripe pour cold water, add the shank and vazvaryava. Harvest the foam, add the spices, chopped onion, zucchini, celery, salt and boil until soft. Grate carrot in large pieces grater, fry in butter, sprinkle with flour, fry, the bay with broth from paunch and stew for 15 minutes. Paunch is removed, cut into squares with a side of 6 cm, add diced meat shank and the mixture into another saucepan. To carrot mixture, egg yolks, beaten with lemon juice, stir well, pour paunch and heat to very low heat for 10-15 minutes so that it does not come to the boil.
