Veal kidneys in Liege

Ingredients
500 g veal kidneys
80 g salo
6 onions
12 baby potatoes
butter
salt
pepper
4 fruit juniper
1 tsp (5 ml) gin or brandy
Method
Diced salo and onions fry in 1 tsp butter, removed from the court and in it fry lightly cleaned, well washed and drained kidney. Peeled potatoes fried in butter. They still should not acquire color (can top up a little water). Salo, onions and potatoes are added to the kidneys. The dish is seasoned with salt and pepper and bake in the oven uncovered. If necessary, make a little water. Finally add Crumpled juniper berries, and five minutes later - gin. Serve in the same court.
