White chocolate sorbet

Ingredients
1 liter of fresh milk
100 g sugar
100 g glucose
1.5 gelatin sheets or relevant dose agartin
300 g white coating
Method
Gelatin soak in water. Couverture cut in small pieces. Boil the milk with glucose and sugar. Remove from heat. Add quilt and squeezed gelatin. Pureed few minutes. Insert to freeze sorbet or ice cream maker, or in a freezer, as in the freezer was stirred at regular intervals in order to avoid the formation of large ice crystals. Serve with optional fruit topping, waffles, pancakes, in coffee or cocoa, sweets.

Glucose can you replace sugar?

Yes, Desi could. I replaced, without notice the difference. The recipe is from a TV broadcast, do not know why glucose is given, this is the original recipe. Certainly makes sense, but I have not yet learned what:-)
