Risotto with seafood

Ingredients
300 g frozen seafood
1 cup Basmati rice
3 tbsp olive oil
6 cherry tomatoes
1 clove garlic
1 stalk green onion
parsley, pepper, salt
pinch of lemon peel

Method
Seafood immersed in boiling water for a few minutes and drain. The white part of the onion cut into small pieces. In a saucepan heat the olive oil in it and fry crushed garlic (unskinned). Garlic is removed and the oil fry the onion. Add the washed rice and seafood. Salt with salt and pepper and pour 3 cups hot water or broth. Stir and let simmer on low heat until soft rice. Chopped parsley, zest and domatchetata (objectives) are added to the rice and stir. Pot screw in newspapers and then in a thick towel or blanket. Allow to stand for at least 30 minutes before serving.

Why is screwed in vestments and then in a blanket? Can not stand under the lid of the pot?
