Vegetable paella

Ingredients
400 g rice
Chapter 1 small onion
1 clove garlic
2 carrots
300 g cauliflower
1 zucchini
1 red pepper
2 tomatoes
200 g green beans
pinch of pepper
6 tbsp olive oil
salt
vegetable broth
saffron

Method
All vegetables are washed and tomatoes grated, and the rest are cut into medium sized pieces. Boil the cauliflower in the vegetable broth. In a large frying pan (if you have a special paella pan in it) fry the chopped onion and garlic for about 5 minutes. Add carrots, green beans, red peppers and cauliflower. Mix well and leave for 10 minutes, stirring occasionally. Then, the vegetable. Reduce heat and let sit for about another 15 minutes. Add the grated tomato and fry it for 5 minutes. Add red pepper, and 1 minute then add the rice. Stir well with a wooden spoon so that you mix with vegetables. Saffron is placed in the vegetable broth and pour over the paella. Mix well and simmer about 18-20 minutes - should leave broth, but should not be too dry. Optional might be constipated, or add other vegetables - peas, pre-cooked beans, etc.

Many thanks for the recipe! It is difficult to perceive any combination of meats with fish!

Maggie I also do not like such combinations can make it with chicken - or any other type of meat (no seafood).

saffron color - to get a yellowish color rice - it will taste. The same color can be obtained by putting the seasoning of magic - magical taste, but it should not put salt because they are very salty.

I read that saffron has a spicy taste and it should not be overdone, but it is clear that is not used much here.

No, not with spicy taste, at least the one that I use. Unless there is some other, but here is not for sale. Mine is the filament as dragonflies, and put a little because many painted.

Very nice recipe, I put peas instead of beans and vegetables had any more.

It was good. Next time will be even better. Me personally more like eggplant instead of zucchini. As saffron read that raises the mood and is a powerful aphrodisiac :) Too bad I did not have at hand but I substituted it with seasoning for rice (ginger, onion and curry).
