Ingredients
6-7 (1 kg) courgettes
2 cup (400 ml) milk
3 eggs
2-3 (150 g) tomatoes
2/3 cup (150 ml) vegetable oil
1/2 cup (100 g) rice
1/2 bunch parsley
pepper
salt

Method
Courgettes are scraped and cut into slices, add salt and leave to drain for 10-15 minutes, then lightly fry in some of the fat . In the remaining oil sauté the grated tomatoes. Add rice with pepper, pour in 1 cup hot water and boil until absorb the water, then stir in the chopped parsley. In a baking dish arrange layers of zucchini and rice, beginning and ending with a layer of zucchini. Pour over the beaten eggs with milk and bake in medium high heat.

Wonderful recipe, great get all crazy about Germans moussaka :)
It is very nasty. Another is the traditional Bulgarian moussaka with ground meat and potatoes. And this pumpkin would satisfy only one died of hunger vegetarian.
I do like moussaka, but add and mince. Just becomes lighter than traditional moussaka with potatoes and cooked meal is a perfect summer :)
ooobicham zucchini in any form! And this is my favorite recipe is very fast and easy, but do not put parsley and dill! Personally, I then flood them again with yogurt and crushed garlic!
Nice recipe, probably accustomed to the classic moussaka with ground meat and potatoes will be disappointed, as I read in the comments, but for vegetarians like me is super :)
In the summer often make this recipe, but we call it simply zucchini with rice and not moussaka. Otherwise, it is very tasty, especially if done with plenty of spices (red and black pepper, a lot of garlic, finely chopped) becomes more spicy, I courgettes instead of parsley put dill is also very suitable.

Thank you for the delicious recipe :) It was very good, just could not resist and put a little red pepper in rice color, but because I did not have tomatoes put two tablespoons chutney. I would put my picture, but while I knew it there was nothing to shoot :)
